Apple Cider “Donuts”

I found a great recipe for baked apple cider donuts on the wonderful Gluten Free on a Shoestring blog. She has such delicious looking recipes and photos on the site. I am anxious to try some of the more complicated ones–wontons, twizzlers, yeasted breads. I love that she has created recipes for items that might otherwise be out of reach for people with gluten allergies, either because there is not a gf version of the item on the mass market (i.e.: boston creme donuts) or they are products that you can find in the grocery store but are just too expensive to buy on a regular basis (i.e.: Against the Grain rolls or pizza shells).

In Vermont at this time of year, it feels like there is an apple orchard on every corner selling freshly fried apple cider donuts. They smell so good. Whenever I see and/or smell them, I can’t help but remember the sensation of eating one–the kind of melt in your mouth feeling. And then I feel incredibly sad. So, yay for creative people who are smart and inventive enough to come up with their own recipes! Here is the link to Gluten Free on a Shoestring’s apple cider donut recipe.

I do not own a donut pan, but I do have a mini-bundt pan.

I had some leftover batter, which I baked in a larger, medium sized bundt pan.

When they come out of the oven, toss with cinnamon-sugar.

Some problems I ran into:

  • I ran out of gf flour mix (brown rice flour, tapioca starch, and potato starch), so I added some millet flour I had in the pantry. AND I USED THE SCALE FOR THE FIRST TIME!! This was a big deal because I didn’t even know how to turn it on. I measured the stuff in grams–that’s right, I can use the metric system.
  • Because the bundt pans were a little bigger than the donut pan that was called for in the recipe, I should have raised the oven temperature slightly. I didn’t, and it took triple the amount of time it should have to bake enough.

Oooh. I also learned that you can add a little extra cornstarch to the general gf flour mix to create GF CAKE FLOUR.

Note: Put the extra cinnamon-sugar in a jar to be used for toast or eating sliced apples.

  1. I am SO excited that you shared this recipe! This is my first fall knowing that I’m gluten intolerant, and I’ve been in complete apple cider donut withdrawal. I’m going to try this recipe this weekend!

    1. Thanks! I really need to buy a donut pan so that the next time I make them, they will actually LOOK like real donuts. Also, a thick glaze on top would make them really amazing.
